To edit a book is akin to a rite of passage; a phase of our culinary lives; when we started out as a young chef, we absorb the culinary skills and knowledge from our masters; and now when we are at the professional level, we disseminate our knowledge to the next generation. This e-book is by no means just a cookbook. It is a book dedicating our utmost respect for the Asian chefs under the Worldchefs umbrella; how chefs are organized in a society; the historical aspect of the organization and lastly the flavors of the national gastronomy.

When I was approached by Continental Director Chef Willment Leong to be the Editor-in-Chief of this project, I agreed hastily. It was indeed an ambitious project; to feature all 21 Worldchefs national organizations in Asia. It is both an exhausting yet exciting experience. I was fortunate to be able to work closely with colleagues from the 21 country associations; I must thank them for their patience and understanding in completing this e-book. My biggest thanks go to my designer team led by Johan Nasir and my Young Chefs Club who assisted in vetting the country submissions.

This e-book showcases our diverse Asian culinary cultures. Although we have different chef associations, nationalities, and religions, we share one thing in commonโ€”our love for food. The opportunity to lead this project is both a learning and teaching process for me, as I learn about different food cultures from all over Asia and how each association is organized. Although this book may not cover all Asian countries, we hope it gives readers an insight into the association’s organization, history, and culinary culture. May we inspire you to continue seeking interest and explore our diverse Asian gastronomy, flavors, and culinary culture.

A Chef of the Century: Celebrating the Life of Siegfried Schaber

In Memoriam: Dr. h. c. Siegfried Schaber, A Chef of the Century

Dr. h. c. Siegfried Schaber, beloved industry figure and former President of Worldchefs and the German chefsโ€™ association Verband der Kรถche (VKD), passed away on 14 July 2023 at the age of 88. A โ€˜chef of the centuryโ€™, his vision and leadership defined a new era for the VKD and the global culinary scene at large.

A VKD member for nearly 70 years, Siegfried was known for his charismatic persona, eloquence, and unwavering passion for his craft. In his eight years as VKDโ€™s Vice President and twelve years as President, he shaped the development of the German assocation, championing young talent and women in the industry. In 2020, he was surprised with a VKD Life Chief Award at IKA in Stuttgart for his lifetime achievements and enduring impact on the industry.

Siegfried completed his early training between 1950 and 1953, laying the foundation for a career that would shape the culinary landscape in Germany and beyond. Throughout his illustrious career, Schaber held key positions at renowned establishments. From his culinary excellence at the Hotel Klasen on the island of Sylt to his as a gastronomy directorship at the esteemed Palast Hotel Regina, the iconic Spatenhaus, and the renowned Restaurant Schwarzwรคlder in Munich, his talents were beyond compare. He served as the Director of Catering at the revered Steigenberger Hotel Management School and led the Rewe Bulk Consumer Service Center. His culinary journey extended beyond borders, with formative experiences in Sweden, France, Switzerland, and Spain. In 1976, he showcased his skill and leadership as the team chef of the German National Culinary Team at the prestigious IKA/Culinary Olympics, bringing his artistry to the world stage.

An international leader, Schaber held significant positions within the World Association of Chefsโ€™ Societies (Worldchefs). He served as Worldchefs President for three terms, from 1989 to 2001. In 1990, he was awarded the prestigious title of Honorary Life Member, recognizing his immense contributions to the culinary world.

Schaber’s professional life was continuously marked with numerous accolades and honors, a testament to his esteemed standing in the international culinary community. He was awarded Honorary President and Honorary Senator of the VKD, the Federal Cross of Merit, and an honorary doctorate from Johnson & Wales University in the United States. In 2020, Schaber was humbled by the VKD with the Life Chief Award, further celebrating his tireless dedication to nurturing and inspiring industry professionals.

โ€œSiegfried Schaber is a chef of the century. He carries the passion for the cooking profession out into the world and has been working on a voluntary basis for the public image of chefs for more than five decades,” said former VKD President Richard Beck of the decision to honor Schaber with the Life Chief Award. In accepting the award, Schaber exclaimed, “My job has given me everything and the world of chefs is my family.โ€

With his passing, the Worldchefsโ€™ community bids farewell to a true trailblazer, a chef of the century, who shared his passion for the culinary profession worldwide. His legacy endures in the hearts and minds of those he inspired and mentored throughout his extraordinary journey. As we mourn this culinary giant, our thoughts are with his loved ones, family, friends, and colleagues. The culinary world will forever be grateful for Siegfriedโ€™s remarkable contributions, and his spirit will continue to inspire aspiring chefs for generations to come.

“A special and heartfelt goodbye to a great man, fantastic chef, great leader and heart blood culinarian, an outstanding career from A to Z who branded and molded the VKD and chefs from the German-speaking societies and countries and more then this, as well on a global level,” said Worldchefs President Thomas A. Gugler. “I knew Siegfried since my young age, and as leader of the VKD, as former President of Worldchefs and as well during my time as the coach for the German Junior National Cooking Team. Siegfried was always a warm heart, an iconic person with a great sense of humor and amazing knowledge. For chefs, he was always a role model and an amazing teacher with his own way of making the chefs’ world move closer together.”

Colleagues and friends from around the globe have also paid tribute to the legendary chef. โ€œThe VKD family loses one of the greats of our profession. Siegfried Schaber was a diplomat, conductor and pioneer. The promotion of young professionals was just as important to him as the further development of his VKD. He has shaped the history of the association like no other over the past 50 years, and his charismatic way of bringing chefs together was unique. We owe a lot to Siegfried Schaber and will sorely miss him in our ranks,โ€ wrote VKD President Daniel Schade in the digital book of condolences

“There goes a really big one from the stage. I only know a few who have done as much for the reputation of the cooking profession as he has,” another said. 

“A great rhetorician and visionary has left us. A man with radianceโ€ฆ we will miss you very much!” a third commented.

In Memoriam: Merrill J. Fernando, A Visionary Disruptor in the World of Tea

Merrill J. Fernando, the visionary founder of Dilmah Ceylon Tea Company, passed away at the age of 93 surrounded by family and friends. He leaves behind a legacy and life story marked by empathy, ambition, and action.

In the early 1950s following Sri Lankan independence, Merrill J. Fernando experienced a defining moment. Selected to be trained as a tea tasterโ€”a profession previously reserved for British nationals onlyโ€”he was one of the first Sri Lankans to be sent to Mincing Lane in London. Considered the โ€œMeccaโ€ of the tea world, there he witnessed the disproportional benefits reaped by multinational corporations importing his countryโ€™s prized herb.

A young man with a big dream, he set out to create his own brand with a commitment to quality, ethics, and authenticity. From that time, Merrill dedicated his life to building a company that would serve more than tea, making business a matter of human service.

โ€œHe resolved to establish his own brand, to offer tea that would be handpicked, handmade and of the highest quality, with the assurance of natural goodness, and a genuine commitment to caring for workers and the environment. It was a dream that none had dared to dream,โ€ said his sons Dilhan and Malik Fernando, who took over the company in 2005.

Dilmah has expanded to over 100 countries, maintaining its founding commitment to quality and integrity. Fernando founded the MJF Charitable Foundation in 2003, sharing a minimum of 15% of Dilmahโ€™s profits to serve communities across Sri Lanka through projects that support the most marginalized. In 2007, he established Dilmah Conservation with a focus on promoting conservation and sustainable agriculture. These commitments have generated over $40 million in direct humanitarian aid and environmental interventions.

Dilmahโ€™s Empower Culinary Hospitality and Inspirational Schoolโ€™s culinary course was recognized and certified by Worldchefs in January 2017. An initiative by MJF, its mission was born from Merrillโ€™s belief in giving back. With the invaluable knowledge and skills acquired through the training course, the school hopes to provide its students with employment opportunities as future chefs in the tourism and hospitality sector, in both local and international kitchens, bakeries, and patisseries.

Merrill was a recipient of many prestigious honors, including Worldchefs Lifetime Achievement Award,  for his philosophy on humanitarian service and building a business at the intersection of passion and purpose.

“His achievement in disrupting an exploitative colonial industry irrevocably changed the lives of producers around the world introducing a paradigm shift in ethical business before ethics and sustainable business acquired the prominence they have now,โ€ a statement read on the Dilmah website.

Merrillโ€™s devotion and urgency changed the world. His legacy, deeply rooted in compassion and genuine concern for humanity, continues to inspire generations of tea enthusiasts and industry leaders alike.

The Worldchefsโ€™ community deeply mourns his passing, touched by his unwavering integrity and indomitable passion. A true icon and a valued partner, for over a decade Merrill has been an extraordinary collaborator. Dilmahโ€™s continued support for chefs and hospitality professionals worldwide has been immense. Merrill’s vision and passion have left an indelible mark, and we at Worldchefs are honored to have been a part of his remarkable journey.

โ€œWith great sorrow, I have to say a last goodbye to Merrill, with whom I had so many great experiences and missions, a man with an outstanding character, a heart full of gold, a passion for the culinary industry, a great father and loving husband,โ€ said Worldchefs President Thomas A. Gugler. โ€œDilmah Tea’s and Worldchefs worked together over many years to place Sri Lankan teas on the great world map of culinary arts and cooking competitions. Continuously this bond has developed further and further. My heartfelt condolences to Dilhan and all his family, friends, culinary colleagues, members of the Dilmah organization, and everyone who knew him personally. I would like you to know that you have left a big legacy behind you, which will always be remembered.โ€

Merrill’s legacy will continue to inspire generations of tea enthusiasts and hospitality professionals, and his spirit will forever be present in the world of tea and culinary excellence. We raise our cuppas to celebrate the life of a true changemaker.

Developed as part of UNICEFโ€™s Worldโ€™s Largest Lesson, Food Heroes has inspired more than 130,000 children all over the world to develop healthier eating habits toward the UN Sustainable Development Goals. Delivered in more than 30 countries by Worldchefs’ members and Feed the Planet partners Electrolux Food Foundation and AIESEC, the interactive workshop gives kids the superpowers they need to make better everyday food choices to contribute toward a healthier planet.

The open-source Food Heroes toolkit, available in English, Swedish, Romanian, Portuguese, Polish, Hungarian, Spanish, Italian, Ukrainian, and Traditional Chinese, can be used by anyoneโ€”from parents and teachers to professional chefsโ€”to raise awareness of the relationship between food and planetary health.

Competition Seminar instructors share techniques from both the perspective of Worldchefs Certified Judges and award-winning competitors. Participants gain an understanding of not only judging criteria but also best practices in the competition kitchen and tactics that consistently reach the highest place at the podium.

Current judges: All Worldchefs Certified Judges are required to attend a Competition Seminar every five years. 

Future judges: Attending a Competition Seminar is a mandatory part of the process to become a Worldchefs Certified Judge. Participants are awarded a certificate of participation that can be submitted as one of the required credentials in an application. Chefs, Commercial Kitchens, and Stress: Could Socio-Demographic Factors such as Personality, Age, and Gender Influence the Stress Level of a Chef?

Background

Most chefs would agree that life as a chef is not always easy. Chefs often work under very stressful conditions due to different reasons which could affect their personal life. Some of the reasons include a stressful working environment (higher consumer expectations) and long hours of work with no proper rest breaks, low pay, and no work-life balance. Contributing to these stress factors is the militaristic environment many commercial kitchens still operate in today. Created by Escoffier with his military background in the 1800s, the norm in commercial kitchens is to operate in an environment where there is a clear identification of roles and duties (1). In principle, this militaristic approach could be beneficial for commercial kitchens to create maximum value by streamlining the processes and increasing efficiency.  However, the problem with this approach is that the hierarchy is not necessarily designed to make working in a kitchen easier, or more supportive for chefs (2). Previous research studies have proven that a militaristic nature of systems has been linked to higher stress levels among kitchen staff, which increased the health risks associated with the profession.

Before we could identify the levels of stress in commercial kitchens, it is important to understand what the word โ€œstressโ€ and โ€œwork stressโ€ means. The word โ€œstressโ€ could be defined as a state of worry caused by a difficult situation and is a natural human response to everyday pressures that everyone experiences from time to time (World Health Organisation (WHO), 2021). However, not all stress is bad for you as it prompts us to address challenges and threats that we perceived as stressful in our lives. This could contribute to higher performance and motivates us to reach our goals and ultimately makes us smarter, and healthier people. 

The problem with stress is when it starts affecting the health of a person. People can no longer cope with their work problems or environment. Therefore, โ€œwork or job stressโ€, can be defined as the harmful, physical, and emotional responses that occur when the requirements of the job do not match the capabilities or needs such as the physical or mental well-being of a person (Seลˆovรก & Antoลกovรก, 2014; Bhui, et al., 2016, Ghani, et al.,2022). Having every day a stressful day at work could lead to chronic work stress which will affect all systems of the body including the musculoskeletal, respiratory, cardiovascular, endocrine, gastrointestinal, male, and female reproductive system, and nervous systems (Baum, et al., 1999; American Psychology Association, 2022, Lu, et al., 2022). Unfortunately, chronic stress will not only affect the employee in many ways but also negatively impact organizations. Organizations will ultimately incur losses due to worker dissatisfaction or absenteeism and high turnover of employees. It could also lead to poor sleep quality among employees which could ultimately influence production efficiency and quality of work (Lu, et al., 2022; Tseng, et al., 2022).

How was the study conducted?

The aim of my research study is to find out the role of socio-demographic factors such as age, gender, and personality on the stress levels of a chef and what could be done to improve the stress levels that are causing many health problems among those around the globe. 

First, an informal survey was sent out on social media to determine what chefs today working in commercial kitchens saw as potential stressors. A poll consisting of one question was created:โ€ As a chef, what do you see as the highest stress factor today in the kitchen where you workโ€. Six possible answers were given. 

In Figure 1, the response to the poll is illustrated in the form of a graph.

What was very interesting about these results is that it seems the highest stressor has changed over the past few years. In earlier years, the highest stressor was long working hours, however, according to the data collected earlier this year, this view has changed according to the poll. Today the highest stressor in commercial kitchens is a staff shortage (44%) followed by long working hours at 16%. It would be interesting to conduct further studies related to this preliminary finding to find out if this view is worldwide, as the poll was conducted in the United Kingdom.

With the help of the World Association of Chefs’ Societies (Worldchefs) a podcast related to my research study including questionnaires was shared with the chefโ€™s community including two certified questionnaires to measure the stress and to determine the personality of chefs. The link also included questions related to socio-demographic factors such as nationality, age, and gender. However, for the purpose of this research study, the nationality of a chef is not included in the findings. Any chef that was willing to participate could do so. More than 120 chefs responded to the podcast. Some of the recorded data could not be used due to incomplete questionnaires and some chefs answered the questions in their native language. Data were analyzed with a statistical software program.

Findings

After an analysis, the following findings were recorded.

Age & Gender

The average age of chefs that participated in this research study was 43 years old. The youngest chef was 19 years old and the oldest chef that participated in this research study was 62 years old. According to the findings related to stress and age. as the age of the chefs increases, their stress levels increase. 

In Figure 2, the results of age and stress are illustrated by an Interval Plot.

Line A clearly shows that chefs in their early 30 have very low-stress levels. In their late 30โ€™s early 40โ€™s the stress levels start to increase significantly, peaking at 50+ years. What was interesting is that some chefs in their late 30โ€™s, and early โ€™40s are less stressed than their counterparts of the same age (See no.1 & 2). This could be related to other socio-demographic factors such as age, education, and cultural background.

The findings related to stress and gender indicated that males are more stressed than their female counterparts. The limitation of the finding related to gender is that only 25% of the data were collected from female chefs.

Before I share the results of the personality traits and stress among the chef community, I thought that I should define what the meaning of each personality trait according to the Big Five Traits Test (BFI-44).

In Table 1, a summary of the characteristics of each personality trait is described.ย 

The findings of personality traits and the effect on their stress included the following: No chefs according to the data collected had a strong extraversion personality trait. It means in simple terms that no chefs were extroverts. The number of chefs that scored high in the personality traits of Agreeableness and Conscientiousness were the same. The strongest personality trait among chefs was Openness and the personality trait that was least common among chefs was Neuroticism.

Conclusion and Further Research Studies

According to data collected before and during COVID-19, most research studies related to stress and chefs indicated that long working hours were a high stressor, however after the pandemic, it seems that a staff shortage was identified as the highest stressor in commercial kitchens. Although more research should be conducted on this observation, it could be an indication that either fewer people are joining the culinary world, or more people have left the industry due to the long working hours and many other factors mentioned above. From this research study, we could also conclude that the level of stress is not only determined by the working environment of a chef but also by socio-demographic factors such as age, gender, and personality. The findings indicated that older male chefs are more stressed than their female counterparts of the same age and that younger chefs are less stressed. Another interesting observation was the lack of chefs that scored high in the extraversion personality (extroverts) in commercial kitchens. At this stage it is not evident if these personality type(extroverts) simply do not apply to work as chefs, or if could it be that a chefโ€™s personality change with time working in a commercial kitchen which could be very stressful at times. To clarify some observations, further research studies will be conducted to clarify these observations mentioned above.ย 

Recommendations

To reduce stress in commercial kitchens the following steps could be taken to reduce the stress levels in commercial kitchens: 

The selection criteria required to hire a chef could be improved. When chefs are recruited for different positions in commercial kitchens, attention should not only be given to the skillset and education level but also to the socio-demographic factors of the person such as age, gender, and personality before hiring a person for a certain position. The HR team could evaluate the candidateโ€™s personality traits by using a simple personality traits test such as the BFI-44 to establish which position would be most suitable. As mentioned above, the Big Five Personality Traits 44 items (BFI -44) consist of 44 questions that will take around 10 minutes to complete, however a โ€œsmall price to pay to secure the right hireโ€. 

Another stress reducer could be allowing your staff more creativity in commercial kitchens. Previous research studies found that chefs showed decreased stress levels in response to increases in the variety of challenges of their work, such as the opportunity to create new menu items (Murray-Gibbons & Gibbons, 2007)

The stress levels of chefs could be reduced by learning additional skills. One such example is Emotional Intelligence, which contributes not only to a less stressful working environment but teaches them how to manage stress in different ways. Other training sessions that might be suitable for staff members could include leadership and management skills, complex problem-solving, and critical thinking skills.

Lastly, ensure that your staff has a proper place to recoup during their busy working schedule. No chef deserves to have lunch sitting on a container in the storeroom or even worse, no place at all to eat lunch.

Thank you to all the chefs for your valuable contributions to the research study related to chefs and stress in April/May 2023. This research study forms a part of a larger research study related to chefs, stress, and robotics. To find answers to the observation made during the data analysis, more data will have to be collected to find answers to these observations/questions. For example, more female chefs should be included as well as interviews should be conducted to find out if there are any other possible factors that could contribute to the stress factors of chefs. Major Duties:

  • To establish, drive and maintain close network with international academic / vocational institutions, hospitality and culinary organisations, professional bodies, Consulates and Trade Commissions, etc.;
  • To explore collaboration opportunities with international partners in curriculum development, consultancy, exchange and articulation programmes, etc.;
  • To work closely with Marketing team to lead process improvements, create market plans for designated regions and to develop strategies to promote and build the brand awareness of the Hospitality Discipline;
  • To lead and conduct market research into international culinary education, training trends and market opportunities for development of strategies and curriculum;
  • To plan and implement culinary exchange programmes with overseas culinary training institutions and culinary associations;
  • To promote and explore articulation pathways to higher / professional qualification programs abroad and within the Council;
  • To work with local international schools and non-Chinese speaking organisations to recruit non-local students for the Institutes;
  • To coordinate with international culinary and hospitality experts to conduct seminars / workshops for students; and
  • To secure funding for students and staff development / exchange for overseas training activities.

Requirements:

  • A recognised degree in relevant discipline, or equivalent;
  • At least 5 years’ managerial experience at an appropriate level of responsibility in the hospitality or catering industry;
  • Good records of professional development and linkages with the industry;
  • Good understanding of the current and future development of the hospitality and catering industry;
  • Good management and administrative experience at a senior level;
  • Fluency in written and spoken English, preferably with knowledge of Cantonese and Putonghua; and
  • Proficiency in common computer software application.

  1. The post is in the rank of โ€œSenior Lecturerโ€ under the VTC Grade and Rank System.
  2. The appointee may be required to perform duties outside normal office hours and in designated places as assigned. ย Frequent international / regional travels will be required.

Coconut Melon Tarts

Coconut Pudding

Ingredients

  • 70 g milk (1)
  • 35 g coconut powder
  • 10 g sugar
  • 5 g crรจme powder
  • 5 g milk (2)
  • 5 g egg yolk
  • 35 g couverture, white
  • 10 Piece HUG Dessert Tartelettes Filigrano Butter Round 3.8cm

Preparations

  • Bring the milk (1), coconut powder and sugar to the boil.
  • Mix together the crรจme powder, milk (2) and egg yolk.
  • Add to the milk mixture while stirring.
  • Bring to the boil, stirring constantly, until the crรจme thickens.
  • Remove the pan from the stove. Melt the couverture in it.
  • Allow the mixture to cool down. Stir and spread over the base of the Tartelettes.

Marinated Melon

Ingredients

  • 60 g water
  • 15 g sugar
  • 10 g lime juice
  • 2 g tarragon
  • 100 g melon

Preparations

  • Heat the water, sugar, lime juice and tarragon until the sugar has dissolved.
  • Allow the mixture to cool.
  • Cut out melon balls and place in the marinade.

Serving suggestions

  • Cucumber roll and cucumber balls
  • Coconut flakes
  • Sugar spirals
